You don't need many ingredients for this cake and it's easy to prepare. Instead of one big cake, you can make smaller cakes from the dough by dividing the dough into muffin tins. Making muffin cakes is a meaningful activity even for the youngest in the family. In this recipe, the wheat flour has been replaced with a light gluten-free flour mixture, so that the cake is certainly suitable for the whole Christmas party.

Christmas Buttermilk Cake:
175 g of melted butter
4 ½ dl of light gluten-free flour mixture
2 tsp cardamom
2 teaspoons of cinnamon
1 teaspoon of ground ginger
1 teaspoon ground cloves
1 teaspoon of baking soda
1 teaspoon of baking powder
3 eggs
3 cane sugar
2 ½ dl buttermilk
gluten-free breadcrumbs
butter for greasing
- Preheat the oven to 175 degrees. Grease the cake pan and sprinkle breadcrumbs on top. Melt the butter and measure the dry ingredients into a bowl, mix.
- Beat eggs and sugar until foamy, add fat, flour and buttermilk. Mix by lifting.
- Pour the dough into the pan and bake for approx. one hour. If the surface of the cake darkens, put baking paper on top. Let the cake cool in the cake pan for 10 minutes, then turn the cake out onto a flat surface.
- If you wish, decorate the surface of the cooled cake with powdered sugar. Enjoy with hot mulled wine.
